Special release in the Antipodes series from La Maison de Whisky (whisky.fr). Aged for seven years in a red calvados barrel then refined for eighteen months in a 100-litre Swedish oak barrel, having contained a single malt from Mackmyra. Notes according to whisky.fr: Nose: both lively and unctuous. Aromas of blossoming apple trees and freshly pressed apples bring an invigorating floral and tangy freshness to the first nose. Allowed to breathe, a very fine layer of liquorice as well as malty scents underline the beautiful influence of aging in a cask that contained the whiskey produced by Mackmyra. This Franco-Swedish alliance finds its balance through medicinal notes (balm, mustard seed) that transcend the aromatic palette. Taste: clean, dynamic. Taking up to the comma the register of both fruity and malty on the nose, the attack on the palate is radiant with luminosity and freshness. More candied (apple, lemon), the mid-palate is also more herbaceous (verbena, sage, chamomile). Gradually, flavors of salted butter caramel deliciously coat the taste buds while notes of porridge transport us back to malty lands. Finish: long, remarkably balanced. On the attack, linden honey settles on baskets filled with a wide variety of apples. The taste palette takes on very beautiful golden and red hues. Preciously woody (beeswax, oak), the retro-nasal olfaction evokes the sweet bitterness of the peel of a cider apple. The empty glass oscillates between white flowers (lilac, lily), spices (star anise, cumin) and scents of fresh walnuts. |
